With the weather getting cooler now I’ve been digging out some of my hearty comfort food recipes. This easy and delicious crockpot chili fits that bill. It’s quick and easy to throw together, serves up plenty for a crowd and reheats well for those who have leftovers. And it doesn’t contain any crazy ingredients that turn off picky eaters.
I’ve been making chili for years but it wasn’t until a couple of years ago that I changed to the current way we prefer it. I had always used tomato sauce as the base for our chili. I’d add beans and ground hamburger and call it a day. Then we tried chili with a tomato juice base and

My daughters are a difficult crowd to please at supper time. If one likes what I’m making the other one says she hates it and vice versa. Every. Single. Night. And I am not exaggerating. It has made dinner at my house so difficult because there are only a few meals they both agree on. Chili is not one of those even though they will both eat it if I beg them. This recipe seems to be the one they’re okay with so I try not to mess with it too much. You can easily substitute ground chicken for the ground beef though if you’re looking to lighten it up. I prefer the ground chicken to save WW points but if I want to increase the chance of the girls eating it I use the ground hamburger.

As far as spices go I usually don’t measure, I kinda just sprinkle some over the top and stir it in. Use your best judgment as to how much flavor you want to incorporate into your dish. My kids aren’t real big on spicy chili so if you are, feel free to add crushed red pepper flakes or ground cayenne pepper. This chili goes great with a dollop of sour cream and topped with shredded cheddar cheese. I prefer to eat it with a lightly buttered kaiser roll or simple cornbread muffin.

Easy Crockpot Chili
Equipment
- Crockpot or Slowcooker
Ingredients
- 1 lb Ground Beef or Ground Chicken
- 64 oz Tomato Juice
- 14.5 oz Diced Tomatoes
- 40.5 oz Kidney Beans
- 15 oz Black Beans
- 15 oz Navy Beans
- 1 tsp Chili Powder
- 1/2 tsp Cumin
- 1/2 tsp Onion Flakes
Instructions
- Start by browning your ground hamburger or ground chicken in a frying pan on the stovetop. Once it's completely cooked through drain.
- While the hamburger is cooking pour the tomato juice in the crockpot. Add the can of diced tomatoes.
- Open and drain the liquid from each can of beans. Once drained add them to the crockpot.
- Add your browned hamburger to the crockpot and stir everything together.
- Next, add chili powder, cumin and onion flakes. Stir again.
- Turn your crockpot on low and cook for 6 hours or on high for 4 hours. Enjoy.
